Udon Noodles in Creamy Coconut-Peanut Sauce
Soup-rise! With the Hot Coconut Soup you can not only prepare a delicious soup, but with a few extra ingredients you can also create a delicious main course.

Ingredients:
Every. Hot Coconut Soup,1 tsp coconut oil, 400g Udon noodles, 2 tbsp peanut butter, 1 piece of ginger (1 cm), 1 lime, 1 handful fresh coriander, 1 handful of peanuts (salted)

Heat the coconut oil in a pan, add the Hot Coconut soup and 200 ml of water and bring everything to a simmer. Peel and finely chop the ginger. Add to the pan together with the Udon noodles and mix everything well.

Add peanut butter and stir in - simmer for about 2-3 minutes until udon noodles are cooked. Serve on plates and garnish with fresh cilantro and salted peanuts. Serve with fresh lime juice.
